A thief (wine thief or beer thief) is a plastic device that has a gravity valve on one end and is used to pull samples out of a fermenter or carboy for hydrometer and taste tests. The device has a large enough diameter to allow a hydrometer to be dropped directly into the sample within the device. The gravity valve allows fluid to enter the vessel, but upon lifting from the batch, the weight of the liquid seals the valve until it is pressed again. If both a hydrometer and thief are sanitized prior to use, the sample pulled can be safely returned to the batch. The use of a thief greatly eases the taking of samples and tests and eliminates the need for additional testing cylinders. There are also glass thief devices that are able to pull samples by closing the open end with your finger after the sample has filled the device. These however do not allow a hydrometer to be dropped directly into them.</p>
